You will also need:

· 3 pounds chicken (about 6 large boneless breasts)

· 8 Tablespoons Butter (you can use 4 Tablespoons of butter and 1/2 cup low sodium chicken stock as an alternative)

· 1small onion, sliced into 1/4” slices

· 1 chopped tomato (with juice)

· 1/4 cup cilantro, washed and chopped (about 1/2 bunch)

Butter Chicken Cooking Instructions

1. Cut the chicken into strips (about 4 strips per chicken breast).

2. Heat 8 Tablespoons of butter in a large sauté pan over medium low heat. When the butter has melted, add 1cup (8 oz.) of tomatoes and 1 sliced small onion. Cook covered for 10 minutes.

3. Remove the lid, add 3 pounds of chicken and spice blend to the sauté pan, then stir to incorporate the ingredients.

4. Reduce the heat to low, cover, and cook for 15 minutes, stirring occasionally.

5. Remove from the heat and stir in 1/4 cup chopped cilantro.

NOTE:

This dish can be prepared ahead and reheated.
